Sous Vide Boursin Stuffed Prosciutto Wrapped Chicken
This sous vide boursin stuffed prosciutto wrapped chicken has been one of my favorite recipes for a looong time (mostly because it’s quite literally all of my favorite things just…rolled together….)
I highly recommend making this one & serving it over some tortellini, creamy mashed potatoes, or pasta to soak up all the sauce (it’s the secret star of the show).
Sous Vide Boursin Stuffed Prosciutto Wrapped Chicken Breasts with Burst Cherry Tomatoes

Sous vide chicken breast stuffed with boursin cheese, wrapped in prosciutto and bathed in a rich burst cherry tomato sauce.
Ingredients
- 2-3 boneless, skinless chicken breasts
- Salt, pepper & garlic powder
- 1 (5.2 oz) container boursin
- 1 (3 oz) container prosciutto
- 3 tablespoons neutral oil
- 1 (12 oz) container cherry or other small tomatoes
- 4 cloves garlic, finely minced
- 1 tablespoon white wine vinegar
- Leaves from three sprigs fresh thyme
Instructions
- Preheat water bath to 150° F.
- Butterfly chicken breasts and season both sides with salt, pepper and garlic powder.
- Spread boursin evenly on one side of the chicken, then roll chicken into a cylinder.
- Wrap stuffed chicken with prosciutto.
- Bag and cook at 150° for 3 hours.
- (This chicken does fine stored at this point. I tested the recipe after storing and from fresh with no difference. Just a note!)
- In a heavy bottomed braiser or similar pan, add oil and heat over medium high until shimmering.
- Dry chicken well but reserve bag juices, set aside.
- Sear chicken on all sides until prosciutto browns and crisps. Remove chicken from pan.
- Add garlic, tomatoes, white wine vinegar, reserved bag juice, thyme and a pinch of salt and pepper to the pan and turn heat down to medium. Cook, stirring frequently, until tomatoes burst and get saucy.
- Nestle chicken back in and serve!
